This weeks Whats for Keto Dinner video is a special meal prep edition. Instead of prepping supper, we are prepping make ahead keto holiday dishes. In this video, I will show you how to make a keto pecan pie, keto rolls, sugar-free cranberry sauce and 2 keto side dishes you can make for Thanksgiving or Christmas.

Plus … Im prepping breakfast for the week so I will have one less meal to make throughout this currently hectic cooking week. Im making keto breakfast burritos using a dried, room temperature level steady beef called Carne Seca Doña Blanca. Following directions for Keto Cornbread here:

Let cornbread cool, then cut into cubes To toast, scatter cornbread cubes over a baking tray and broil over high heat to toast, turning after toasting for a couple minutes on each side.

1 batch keto cornbread cubes.
6 pieces bacon
1 bundle of chicken gizzards
1/2 cup onion
1 cup celery
1/2 teaspoon salt
4 cloves garlic, minced
2 tablespoons minced fresh sage (2 teaspoons dried).
1 tablespoon thyme (1 teaspoon dried).
1/2 cup sliced parsley.
1/2 cup chicken broth.

Add chicken gizzards, cook till prepared through (3-4 minutes). To the frying pan include onion, salt, celery and garlic. Slice up bacon and chicken gizzards into little pieces and add to bowl.

1 pound cauliflower florets.
3 tablespoons butter.
3 tablespoons almond flour.
1 cup whipping cream.
1 teaspoon salt.
1/4 teaspoon onion powder.
1/4 teaspoon garlic powder.
1/4 teaspoon pepper.
1/2 cup shredded sharp cheddar cheese.
1/2 cup shredded gruyere cheese.
6 slices of bacon, collapsed.
1 teaspoon fresh thyme.

Include salt, onion powder, garlic powder and pepper. Include half the cheese mixture to the bottom of a cast iron skillet or casserole dish. Include florets on top of the very first cheese layer.

  2. I made the cauliflower au gratin. (Had to use all cheddar since the other wasn’t on the shopping list ). The dinner rolls were a bit and the kids ate them yesterday not knowing they were keto or that they were for thanksgiving. I made the pecan pie too. Haven’t had a slice yet but I looks amazing.   13. Your dinner rolls are the best! I made them a couple of weeks ago and froze most of them, since I am the only keto person in my house. Sometimes I microwave one, slice, butter and then toast it in a fry pan….so good. Great with tuna fish for lunch, they freeze well. Thanks for the wonderful recipes.

  28. You were close with the pronunciation of the meat product. Phonetically it’s kind of like “car-neh (with a slight rolled r) sek-ca don-ya (sounds like don’t without the t) blan-ka”

  29. You are correct, a bit better would be “don-i-a” the “o” as in “Donald”; seca is “Sec-ah”—-e like “section” and “a” like “above”. Yes, H.E.B- short for H.E. Butt..yeah, initials sound much better! Thank you for your video—excited to try all ur recipients!!

  31. Recipes look fantastic!

    I’ve been on keto for about a year and at maintenance weight. I’m still debating whether to do a carb refeed for Thanksgiving and eat what the rest of the family is (aside from dessert) in light of me being the only keto member of the family and being at my goal weight. Refeed to restore muscle glycogen. Any suggestions?
