  1. Frying in coconut oil is better and fits in with Thai cooking flavours … Olive oil should not be used for high temperature cooking. And why remove the moisture? That’s where a lot of the flavour is.

    I like to also stir in a few teaspoons of Thai curry paste to the satay sauce. Yum!
