  6. I JUST MADE THISSSS. I ate the whole bowl of it ahaha. But what I did to half of it is that I added a little more water, pao bhaji masala and more butter with some lemon on top. It was like PAO BHAJI KI BHAJI. I can bet it has more flavors than cauliflower version of bhaji. IM IN HEAVEN. ๐Ÿ˜๐Ÿ˜๐Ÿ˜

  7. Hello from England ๐Ÿ™‚ I made my version of this the other day, but your version, with garlic in the aubergine, is another level I have to try. So happy I found this channel. Been living on saag paneer tbh because it’s easy.

    I remember my mum went through a phase of making a sabji with homemade paneer curds with cashews, peas and sweetcorn. It was a dry sabji and I was wondering what to replace the cashews with. Do you have any ideas? Thanks for the naan recipe btw. Rock on๐Ÿค˜๐Ÿผ

  8. Perfect example of what I have been trying to tell friends who try to cook indian food. Good indian food does not need to be fiery hot or have too many spices in it. It’s all about creating layers of flavor.

  10. I had some awesome Indian in Baltimore and haven’t found my fav dish since. It is called Chicken Dhania and it had a very intense coriander taste. Would you consider attempting cooking that?

  11. The one Indian restaurant we go to makes a Baingan Patiala is what they call it, I like it better than the Bhurta .. differance seems to be they add raisins in there and it has a sweetness to the dish.. I love it.

  14. I’m buy lot of vegetables doing keto . Eggplant one of my fav . I got tomatillos or gooseberries this week instead of tomatoes . I have one eggplant so will make . Thanks big time doing vegetables recipes your in my ballpark now . Salute ๐Ÿ‘

  17. I usually cook my bharta a lot more. It loses a lot of water and turns reddish brown. Can’t stand even slightly undone baingan.

  18. Quick question Sahil , in USA we have electric stoves and that burnt flavour can’t be achieved. I tried in oven too but it doesn’t taste the same as it used to back in India …any idea or tip to roast in oven and not loose the flavour

  20. Hey sahil. After seeing your baba ganoush receipe I cooked the baigan bartha and enjoyed with keto naan . Here is a variation my dad used to cook, called baigan chutney. Basically boil the peeled eggplant for few minutes till soft, blend with 1 onion, ginger garlic green chilies and lots of cilantro , salt and lemon juice, in a blender. Spread it like a chutney on keto naan. ( we use to spread on bread) I have been encouraging my diabetic relatives in Mumbai to try keto diet using your recipes . Of course I have to translate in Hindi or Sindhi for them.

  23. You gave me an idea here. I never thought of eggplant as a “mashable veggie” (particularly as a roasted veggie even adding to the flavor! I am partial to all things grilled. This is looking like a great substitute for mashed potatoes. hummm The dish looks delish BTW!
